Anyone who follows this site knows I'm a bit obsessed with pancakes ;) I'm also trying to lose a few pounds, but have always believed that weight loss should never mean totally depriving yourself! So here's my new recipe for pancakes that are high in protein, grain-free, and YES!.....will help you lose weight!
Celiac Scoop Gluten-Free, Grain Free Weight Loss Pancakes
2 eggs (I like Omega 3 eggs, or EB eggs)
1/8-1/4 cup XO baking all purpose flour (grain-free, made with coconut / cassava)
*a dash of water
*1 tablespoon of butter (grass fed is best)
Blend all ingredients into a small bowl with a fork. Even when making multiple pancakes, I like to separate the ingredients for one pancake at a time. Use more or less flour depending on how dense you like them. (I think less is more for these ones). This is basically the same recipe as these pancakes, just using the XO All purpose flour, since it's Grain-Free. They won't come out as "fluffy" as when you use the Bisquick. But you'll feel much healthier and leaner when you eat these. They give a protein and energy boost to last until lunch! The berries are also full of antioxidants and fiber, which are key ingredients to any healthy diet.
Directions: Butter a small skillet. Cook on medium-high until a "circle" is formed. Flip the pancake and cook until done. It only takes about 5 minutes. Top with fresh or frozen 3-berry blend (I get the frozen ones at Target), and sprinkle with organic powdered sugar (Trader Joe's has corn-free p. sugar).
