These cookies are the bomb. And SO easy to make. I'm re-posting this one, since I added some organic coconut flakes and cut the recipe in half.
Makes 12 delicious cookies in under 15 minutes!
Gluten-Free, Grain-Free Almond Flour Coconut Chocolate Chip Cookies
Put all of these ingredients in a bowl and blend well:
1 1/2 cups of Almond Meal / Flour (Trader Joes Brand is great)
1/4 butter (grass fed is best)
1/2 + 2 tablespoons organic coconut palm sugar
1/4 teaspoon Celtic Sea Salt
*As many chocolate chips as you like (Enjoy Life brand!)
*Organic Coconut Flakes (Trader Joes brand)
Separate dough into 12 balls. Place directly on cookie sheet. No greasing necessary.
Bake at 350 degrees for 12-15 minutes.
Let cool, and enjoy! They also taste great after being refrigerated!
