Last night while teaching piano, I was tortured by the smell of cinnamon roll strussel muffins coming from the kitchen of my students' house. I asked the girls how they made them, and decided to create my own Gluten-Free version. Using the Namaste Sugar-Free Mix, they came out fabulous! I hope you enjoy this one...perfect for parties, girls night, or anytime you need an excuse to binge a little.. ;)
Gluten-Free Cinnamon Roll Muffins
*Using this Mix shown below, blend all ingredients together (I used butter instead of oil)
*Add 1 cup of coconut palm sugar
*Separate into muffin cups
*Top with plenty of cinnamon
Bake as directed
For the icing:
*In a sauce pan, melt 1/8 cup butter, 4 tablespoons of cream cheese,and 1 cup of Trader Joe's Organic Powered Sugar. Stir constantly on medium-high heat
*Drizzle over the muffins.
