Date Night: Gluten-Free Pizza!!

Like many of us on a Gluten-Free Diet, I don't eat out much because of the risk of cross-contamination. Certain restaurants like BJ's, Sweet Tomatoes, Chipotle, and PF Changs are pretty safe...but if you're trying to cut out additional allergens like soy and corn it can be a lot more difficult. Since learning I was intolerant to corn products, the thing I have missed most is the pizza at BJ's. So, I decided to make homemade gourmet GF pizzas the other night...and they turned out fabulous! It only took a few simple ingredients. My date LOVED his pizza, and didn't mind that there was zero gluten in it ;) 

 Gluten-Free Bacon, Chicken, Artichoke and Tomato Pizza
(with an Alfredo sauce base)
*Brown Rice Crust (I love Nature's Hilights Brand from Whole Foods)
*Shredded Goat Cheese from Trader Joe's
*Trader Joe's Bacon
*Artichokes
*Freeze Dried Chicken
*Diced Tomatoes
*GF Alfredo sauce

Bake Crust at 275 degrees for about 15 minutes or until slightly crispy. Season and fry the chicken, and cook the bacon. Remove crust from oven and top with GF alfredo sauce, goat cheese, shredded chicken, bacon bits, artichokes and tomatoes.
 Bake for an additional 10-15 min at 350 degrees. 
Serve hot and enjoy!

Gluten-Free Bell Pepper and Bacon Pizza
(with a tomato sauce base)
*Brown Rice Crust
*Shredded Goat Cheese
*Trader Joe's Bacon
*Diced red and green bell peppers 

Follow the same basic directions as the first pizza. :)
