I modified my banana muffin recipe to make it a little healthier....this time using coconut oil in place of some of the butter, and switching out the cane sugar
with low-glycemic organic coconut palm sugar.

1 cup XO Baking Co. gluten-free all-purpose flour
1 grass-fed egg
1/2 teaspoon baking soda
1/2 teaspoon fine pink himalayan sea salt2 large, ripe bananas
1/2 cup organic coconut palm sugar
4 tablespoons coconut oil
2 tablespoons butter, softened or melted
Enjoy Life Chocolate Chips - optional
Bake at 350 degrees for approx. 15 minutes or until fork comes out clean.
Makes 12 muffins.
