Gluten-Free Paleo Waffle Sandwich

One of the difficult things about doing a Paleo diet is finding a good bread for sandwiches! The Paleo breads on the market aren't too tasty....and so I'm working on my own recipe for bread using the XO Baking Company All-Purpouse Flour. But in the meantime - I'm enjoying sandwiches made from my Paleo waffles! Just throw a couple of these in the toaster, add any fixings you like....and BAM! You've got a tasty sandwich.



Fresh & Easy Yellow Mustard... Mmmmm!


Trader Joe's Real Mayo - made with egg whites, canola oil, apple cider vinegar, and lemon juice.

I also love adding GF turkey or ham, sea salt, pepper, and fresh romaine lettuce.
