I made some snicker-doodle cookies for my piano students the other day, and they were a hit! I used this mix from the XO Baking Company. It's made with Coconut and Cassava Flours.
Just follow the recipe for Classic Sugar Cookies, but add a few dashes of cinnamon into the mix and then roll each cookie into cinnamon and sugar before baking. They bake at 350 for just about ten minutes -and come out perfectly soft and chewy. You can bake a little longer if you prefer crunchy cookies. One batch will make about 30 small cookies.
