Bye Bye Gluten Belly!

How is everyone doing so far on the 2-month PALEO challenge?! I feel pretty darn good.....and the best thing is, my belly is super happy! Removing all grains from my diet has led to a huge improvement in my digestion and over-all well being. So far I've had a few cravings for the high-carb Gluten-Free grains - but I know that as I continue to stick with this plan - the cravings will be less and less. Some friends have told me that they are amazed at the amount of will-power I have....but I think it comes with being a Celiac. Like many of you, I went through enough trouble for way too many years before a diagnosis, and when it finally came, it was the easiest thing in the world to give up Gluten, because I FELT better. With the PALEO diet, I'm feeling even better than that - and that's my motivation. I've been waking up with so much more energy, and have felt a lot more content throughout the day. On top of that, I've got my abs back! ;)
