Ever get a craving for the orange chicken at Panda Express......and then realize it's NOT gluten-free??!?! :( Well, here's a recipe for you to make your OWN "Panda Express-Style" Orange Chicken. I modified this recipe to be gluten-free and soy-free....I hope you enjoy!
You will need:
*2 lbs. boneless, skinless chicken (or freeze-dried chicken)
*1 1/2 teaspoon salt
*oil for frying (I used safflower oil)
*1/2 c. PLUS 1 tablespoon tapioca starch
*1/4 c. almond flour
*1 tablespoon minced ginger root
*1 teaspoon minced garlic
*1/4 c. chopped green onions
*1/4 c. red wine vinegar
*1/4 c. water
*1 teaspoon sesame oil
*3 tablespoons GF / Soy Free "soy sauce" (I use coconut sap, it's delicious!)
*5 tablespoons of sugar
*5 tablespoons of white vinegar
*1 orange peel, finely grated
*cut chicken into 2-inch squares and set aside. In a large bowl, stir egg, salt, pepper, 1 tablespoon of oil, and mix well. Add tapioca starch and almond flour to the bowl. Mix. Add chicken pieces, stirring and coating them with the batter.
*Heat some oil in a WOK for deep frying at 375 Degrees.
*Add chicken pieces, a few at a time, and fry until they are golden crisp. Set chicken aside.
*Clean the WOK and heat for 15 seconds over high heat. Add ginger and garlic and stir together. Add green onions, red wine vinegar, and stir quickly. Add all sauce ingredients and bring to a boil. Add cooked chicken pieces and heat until the sauce is thickened.
Best served with steamed rice & broccoli. :)
