I love Anna's Bread Mixes. They are all Gluten-Free, and most of them are also GMO FREE, Soy, Corn, Dairy, and Nut-Free too. Anna uses a unique blend of flours, including millet flour, chickpea flour, pinto and navy bean flours, along with tapioca starch, crystallized honey, and non-corn xanthan gum to create exquisite-tasting recipes.
This weekend I made some Banana Muffins out of Anna's Banana Bread Mix. I only had to add 2 eggs, 1/3 cup of butter, and 3 mashed-up bananas to the mix. It was quick & easy, and in just 25 minutes, I had these fabulous-looking muffins! (Which, I might add, tasted great too!) I would definitely recommend that anyone making this mix add a good amount of walnuts. (Bananas and walnuts make a perfect pair!)
In one little muffin, you will get loads of potassium and vitamin B6 from the bananas.....magnesium, omega-3s and anti-oxidants from the walnuts...and loads of fiber, b-vitamins, and great taste from all the delicious ingredients of Anna's Mixes.
I will be reviewing Ann's PUMPKIN bread mix next...so stay tuned!
Happy Gluten-Free Baking!
