Breakfast Quinoa

Getting enough PROTEIN and FIBER in a Gluten-Free Diet can be a challenge. Thank goodness for Quinoa...the amazing little grain that is packed full of both! I LOVE mixing it with scrambled eggs and veggies for breakfast. It's the perfect way to get the nutrients I need to start the day off right.

This is SO easy to make... you must try it! It's comparable to the "fried rice" you used to get at Panda Express before you went gluten-free ;) Give it a try, and let me know how you like it!

1/2 c. Quinoa
1 c. water
1 c. frozen veggies, your choice
2-3 scrambled eggs
Lime Juice, sea salt, and pepper to taste
1 tsp. butter

*Cook Quinoa as directed (it's cooked just like rice).
*After quinoa has simmered for about 10 minutes, quickly add in frozen veggies, and close the lid. Let it simmer for 5 more minutes.
*When Quinoa is ready, mix in scrambled eggs.
*Mix in butter.
*Add in 1-3 "cap fulls" of lime juice, sea salt, and pepper to taste.
(Optional - if making this recipe for lunch or dinner, it tastes great with Gluten-Free Soy Sauce!)
