This dish goes great with fried chicken or steak.
1 cup cooked quinoa
1 cob of organic corn
1 red, 1 green, and 1 yellow bell pepper
1-2 cups of black beans
1/4 of an onion
2 tbsp butter
3 tbsp lime juice
sea salt / pepper to taste
Add butter, lime juice, and salt & pepper.
Tastes great served hot or cold!
