The other day I was shopping at Fresh & Easy...one of my FAVORITE local grocery stores. I love this place so much because of all the fresh ingredients, reasonable prices, and gluten-free selections. However, I get a little sad when I have to look at all of their "homemade" and ready-to-eat entrees (fabulous looking burritos, pasta dishes, fish and chicken dinners) and realize that NONE of them are GF.
After drooling over an enticing dish of glutenous pasta, I decided to take matters into my own hands, and make a gluten-free version of it! So, until Fresh & Easy starts making gluten-free entrees, here's how you can make one yourself! It's absolutely DELISH :) Even my non-gluten-free family members LOVED it, and so will you!
-8 oz. Trader Joe's Brown Rice Pasta Fusilli
-1/2 jar of Trader Giotto's Alfredo Sauce (or your favorite GF Alfredo Sauce)
-A few strips of bacon (Oscar Mayer is GF)
-1 cup peas, fresh or frozen
-Real Parmesan cheese (I use Homestyle brand 100% Natural Parmesan-Romano)
-Boil pasta for 9 min, rise well and drain.
-Add Alfredo sauce, and stir until hot. Cover and reduce heat to low.
-Cook bacon, then and chop into bacon bits.
-Heat up the peas. Do NOT overcook.
*Arrange on a plate, starting with pasta and sauce, followed by bacon and peas and a sprinkling of cheese.
Serve with your favorite sparkling LIMEADE :)
