Creating a Gluten-Free Salad

Being Gluten-Free doesn't mean you have to limit yourself to places that have a specific gluten-free menu. There are other options for us out there...we just have to be cautious and creative! One of the best places to eat out with the family is SWEET TOMATOES. They offer a huge salad bar with tons of fresh veggies, including my absolute favorite, pickled beets. Mmmm :) I asked the manager once if any of the salad dressings were Gluten-Free, and he brought me out a list of all of the dressings and their ingredients, so that I could see for myself which ones were safe. Since then, I've enjoyed their delicious honey mustard dressing on top of my salad each time I go.

Here's what I piled on top of this plate: Iceberg and romaine lettuce, boiled eggs, olives, pickles, sunflower seeds (for a little extra protein), delicious pickled beets, and honey mustard dressing. It was FAB-U-LOUS.

Of course, when eating at a salad-bar, you have to be cautious of cross-contamination. Make sure the kid in front of you doesn't drop his croutons into your dressing, or that any pasta noodles don't get mixed in with your veggies. I have eaten at Sweet Tomatoes dozens of times since being diagnosed, and have never had a problem with cross-contamination. And indulging in the gluten-free soft serve ice cream at the end of my meal always makes my night complete!

So go ahead and branch out this week....try out your local salad bar place, and create your own Gluten-Free salad. And let me know what's on YOUR plate!
