Here's my recipe for GF Strawberry Cream Cheese Pie... it's a great dessert for spring and summer parties, family gatherings, weddings, and would make a fabulous Mother's Day dessert for your mama! It's super easy to make, and only takes about 20 min. No baking required!
Ingredients: (Makes 2 pies)
4 Cups of coarsely crushed Rice Chex
1/2 C. butter
8 oz. strawberry cream cheese
1 c. powdered sugar
8 oz. Cool Whip
4-5 cups of fresh strawberries
*Melt 1/2 cup butter and mix with the crushed Rice Chex. Place in two 9-inch pie tins.
*In a large bowl, beat together cream cheese with powdered sugar, then stir in the cool whip.
*Cut strawberries into thin slices and add to the mixture, setting aside several strawberries (cut in halves) for the topping.
*With a spoon, carefully spread the cream cheese mixture on top of the Rice Chex crust.
*Place the remaining strawberries on top of the pie, and ENJOY!! :)
This dish can be served right away or refrigerated. It also tastes great FROZEN (and the crust stays together better this way). RASPBERRIES also make a great substitute if you don't have Fresh Strawberries available.
