One of things I've missed the most since going gluten-free has been macaroni salad...and so today I decided to make my own gluten-free version!! I also tried to re-create a salad I had at Tahoe Joe's over the holidays...and it went perfect with my macaroni!! Here are two simple recipes so you can try some for yourself!
Gluten-Free Macaroni Salad:
1/3 box of Lundberg Rotini Pasta (from Whole Foods) Jovial or Trader Joe's brand will work good too, I just like the smaller noodles for macaroni.
1 big teaspoon of Mayo (Whole Foods 365 Brand is a soy free / gluten free mayo)
Onion Powder, Sea Salt, and Black Pepper to taste
Cook pasta for 9-11 minutes. Drain and cool in refrigerator for a few minutes. Add mayo, then mix in onion powder, sea salt, and black pepper. Any leftovers can be refrigerated for a couple of days and will still taste great!
Gluten-Free Goodness... Mixed Greens Salad
1/2 bag Iceberg Lettuce
1/2 bag Spinach
I small tomato
1 handful of chopped walnuts
A few raisins
Gorgonzola Crumbles (this is a kind of blue cheese that is GF--I get it at Whole Foods)
Mix it all together, add some of this amazing dressing, (Annie's Brand Lite Honey Mustard) and enjoy!
This could also make a tasty and healthy valentine's dinner for two on Monday night... before you splurge on gluten-free chocolate cake or see's candy :)
